Recreational Courses
The majority of people with a passion for food and cooking are never going to be professional chefs, but that doesn’t mean that they don’t want to develop their cooking and culinary arts skills to a high level and share their passion with others, For that reason, LCB offers a large array of recreational cooking and culinary arts courses in the evenings and on weekends.
If you are a very serious recreational cook, you might even consider taking the Level 1 course in the professional programs section, Cook Basic Diploma. This course takes a serious level of commitment and is likely to be too much for the majority of people seeking recreational cooking courses, but if cooking is really a passion for you, check it out!
Cooking in the Kitchen Basics:
February Classes
Fish - February 8th, 2012 [6pm-8pm]
Buying fresh fish in a seafood market or in a restaurant can be a tall order. What's good? What's
fresh? Is this fish too "fishy?" By coming in armed with the right knowledge and asking the right
questions, you too can make the proper decision as to what fish you want to take home and cook. [$75]
Shellfish - February 15th, 2012 [6pm-8pm]
If you'd like to do yourself a favor by eating a nutritious and balanced diet, let us help you
branch out your fish repertoire, especially when the meal involves shellfish. These little critters
are really a special treat and they're good for you too. [$75]
Stocks and Sauces - February 22nd, 2012 [6pm-8pm]
Stocks: the basic how-to on creating flavorful bases for soups and sauces. A sauce is the
crowning glory of any dish. Discover the basic five "mother" sauces, from which you can
literally create hundreds of variations to dress, compliment, enhance and bring out the flavor of
the food it is served with. [$75]
Sushi - February 29th, 2012 [6pm-8pm]
Sushi anyone? It's all about the rice. Learn about different types of sushi: rolled, balled,
pressed ... Make your own nori-maki, the most well known sushi in Canada, with just about any
ingredient, without any fish! [$75]

March Classes
Mexican - March 7th, 2012 [6pm-8pm]
Tortillas are the main staple of the meal. They can be eaten by themselves or with different
types of fillings and are the basic bread for making several Mexican dishes: burritos, tacos,
enchiladas, taco salad shells, and tostadas. Turn up the heat! [$90]
Thai - March 14th, 2012 [6pm-8pm]
Heavenly Thai food - a taste explosion in every bite: fresh, spicy, salty, sweet and sour, with a
variety of textures and temperatures (crispy and soft, hot and cold). Chinese food, but with more
intensity with Indian flavors, more aromas, spices, and textures. If you like Chinese and Indian
food, you're going to fall head-over-heels-in-love with Thai food! [$90]
Vegetarian - March 21st, 2012 [6pm-8pm]
Explore the artistic flavors and textures of inspired vegetarian creations. The art of cooking with
vegetables, fruits, alternate protein sources, herbs and spices will show you how to create
flavorful and nutritious meatless meals. [$90]
Indian - March 28th, 2012 [6pm-8pm]
Spice up your cooking repertoire with the Chefs Butter Chicken recipe, and enjoy the
compliments at your next dinner party. Learn how to make your very own Garam Massala spice
blend and treat yourself to the guilty pleasure of an easy no-bake dessert: Coconut burfi. [$90]

Baking, Cakes and Pastries:
Baking and Pastry I
January 7th, 14th, 21st, 28th and February 4th, 2012 [9am-1pm]
Bottomless butter cream icing. 12-tier wedding cakes. 5-kilogram éclairs. Bouquets upon bouquets of fondant roses. This 5-session, 20-hour course has it all! Learn the ins and out of baking and pastries, but be careful, you might not have room for dinner! [$750]
